FIR TREE Premium Organic Honey is collected by our bees on Mount Mainalon in Arcadia, Greece at a height of >1000m. Mount Mainalon is full of Greek Fir trees, giving this honey its truly uniquely characteristic metallic hues across its dark red colour. That’s right – this honey is naturally low in sugars and so rich that it’s dark red! Its richness is also textural: it is thick and creamy rich, like toffee caramel. Sustainably extracted by centrifugal force method and with absolutely zero heating process – which is why it sustains all its beneficial nutritional elements.

In antiquity, the mountain was especially sacred to Pan (God of the wild, of nature and rustic music). Natura (2000) cites Mainalon as the Greek fir’s best representation in Peloponnisos. This is where our bees harvest Fir Tree blossoms, making our Fir Tree honey extremely special in taste and origin, and one of the best-if not the best-honeys in the world.

Distinctive toffee taste
Fir Tree Premium Organic Honey is a feat of colour and aromas. Slightly malty, it has a distinctive toffee-like taste, while its aromatic flavors evoke the woodland and various flowers and fir trees it comes from. It has a natural propensity against crystallization, while its thick, full-bodied texture perfectly complements its delicious flavor. Straight out of the jar, it has a thick consistency like butterscotch, satisfying the most demanding of connoisseurs.
Does this honey crystallize?
FIR TREE has a thick consistency that doesn’t usually crystallize. However, it may crystallize over time. Crystallization is a natural process of pure, raw and unfiltered honey and may slowly occur. It does not affect its quality and nutritional value.
How do I decrystallize honey?
You can simply dip the (closed) jar in a pot filled with warm water, (not boiling) and leave it there for several minutes until it softens and liquifies again.
What is the best temperature to keep this honey?
Although honey can be exposed to higher temperatures for brief periods, the absolutely best temperature to keep honey and preserve its aroma, flavour and colour is at room temperature, or ideally at ~15°C (~60°F).
How do I put this honey in my tea without losing its benefits?
We suggest you make your hot beverage first and add your honey when it has cooled down, when it’s warm. While it will still be able to dissolve (you can stir it with a spoon), the heat will not “kill” its beneficial enzymes and vitamins.
How to get the best out of your honey?
As our honey is a living product with a uniquely high nutritious and health value, we urge you to eat it raw, and never heat it above 35-40°C (95-104°F). Higher temperatures will kill the beneficial enzymes and antioxidants that make your honey truly powerful and unique.

Fir Tree Premium Organic Honey from the Greek Fir Trees (Abies Cephalonica) is harvested by our bees at an altitude of <1000m on Mount Mainalon in Arcadia prefecture, Greece. Abies Cephalonica is native to Mount Mainalon, which makes the species and its growth unique in Greece – and worldwide – due to low temperatures throughout the year. This honey is produced by bees that collect honeydew from insect species which live on native Greek Fir trees. This makes the honey unique compared to other flower blossom honeys, in that it is resistant to crystallization – while its climatic origins also give it its unparalleled malty flavor!

Good for stomach and not overwhelming
I’ve tasted many honeys, but this one stands out. Amongst the Apiceutials honey, this is by far the best in flavor and texture. It is not as sweet as the rest of the honey, and it lands down well in the stomach, without overloading it.
